Meat stock

Meat stock is a staple in my household and is wonderfully nourishing for both mamas (pregnant/postpartum) and our little ones. It is rich in collagen and amino acids and is packed with vitamins and minerals. It's really simple to make and the most basic recipe is really just 2 ingredients - chicken and water. All you need is a little time and you will have a pot of stock which can be used in various ways, or simply taken as a beverage.

Ingredients:

1 whole chicken, include feet & necks (sometimes I add in more)

Water (ideally, filtered)

Optional: onion or ginger, peppercorn, herbs (e.g. rosemary, thyme, oregano, parsley), carrots, sea salt


Steps:

  1. Break the chicken into smaller pieces to allow the joints to come into contact with the water.

  2. Add enough water to cover all the bones.

  3. Add optional ingredients to the pot.

  4. Bring it to a boil for 15mins, then simmer for 2-3 hours.

  5. Strain the liquid, this is the meat stock. It will keep in the fridge for 5 days and for months in the freezer.


Notes:

You can also use other meat such as beef knuckle, beef ribs abd beef shank.
