These banana almond muffins were so easy to make and such a hit with the little ones. This is going to become a regular in my family for sure, and it's simple enough to make for non-bakers like myself. This recipe is gluten-free and dairy-free, and I used super ripe bananas, so it had just the right amount of flavour without any additional sweetener required.
Ingredients:
240g almond flour
3 spotty bananas
1 tsp baking soda
1 egg
Optional: maple syrup, vanilla essence
In a large mixing bowl, add baking soda to almond flour and mix.
Blend up bananas and egg till smooth. Pour the mixture into the dry ingredients and mix well.
Pour the batter into muffin tray/liners and bake at 180 degC for around 18mins, or until slightly browned on top and a toothpick comes out clean.
Let the muffins cool and they're ready to eat!
I can't wait to see how you go with it! Tag me on IG if you try it out.
